Mishima Ranch Wagyu Beef maintains high quality standards by:
- Maintaining a higher percentage of Wagyu genetics in its production system. While many brands use 50% Wagyu genetics, many of the cattle in the Mishima Ranch system are 75% or 87.5% Wagyu genetics. The results of this are a higher average marbling score and more top graded product.
- Limiting cattle sources that supply the chain. There are only 3 sources that meet our standard. Before we purchase any cattle from a source we physically and personally inspect the genetics of their herd, the feed rationing program, the feeding and feed conditions, the health records and many other factors to make certain that the cattle will perform well in our system.
- Using a unique feeding program. All cattle are raised in the Japanese method, proven for its resulting high quality and consistency. This is a very clean and low stress environment. All the cattle are fed in live in covered conditions. The feed is kept indoors to keep it clean, dry and pest free. The feed is 100% vegetarian, no added animal fats or proteins. No hormone implants or hormonal feed additives are used. Fed for a minimum of 365 days, typically 425 days or more.
Consistency Maintained
Some of the things that set us apart in quality and consistency are:
- Packaging Specification: All of our products are user friendly and in small cases sizes. Typically items are 1/4", 1/8" trim level or peeled/denuded. Most cases sizes are 2 pieces per case and typically less than 30lb cases. All steak type items are packaged in a vacuum with the Mishima Ranch product emblazoned on the bag. You will know confidently that it is Mishima Ranch Brand.
- Shelf Life: We use a plant that has very high standards for cleanliness and temperature controls. The shelf life is extended due to the use of a super cooling glycol tank immediately after the shrink tunnel. Typically our product will have a shelf life 30 days longer than the competition.
